Papadum Fun!

Papadum...those crunchy disks served with a variety of chutneys at Indian restaurants the world over.  They vary between regions and families - often made with lentils, potatoes, or chickpeas and spices, and are fried or roasted over an open flame - both techniques having their own individual textures and flavors.  

The dried wafers are available almost anywhere these days - I have seen them at most of the neighborhood groceries here in SE Portland.  In this class, we will learn to cook with papadum in some exciting ways!  We will make crispy  fritters, a spicy Rajasthani curry, and chaat masala papad...all with versatile papadum!  

Come to this class hungry - we will be tasting throughout the lesson - and all accompaniments (chutney, rice, etc.)  and drinks will be served alongside.

Soup and Bread Night - Indian-Style!

Little Garlic Naans

Green Apple Chutney

An Anglo-Indian style dish from the time of the British Raj, Mulligatawny is roughly translated from the Tamil words for "pepper-water" and our version will be lentil-based with plenty of curry powder, ginger, and coconut.  Buttery garlic naans make the perfect dipping accompaniment and scoop up sweet and sour chutney quite nicely!

Food Hacks!

Its hard to believe summer is right around the corner!  Long, hot days means more fresh fruits and vegetables, creative salads, chilled soups, and delicious ice-cold smoothies.  

In this class we are going to learn clever ways to prep fruits and vegetables, and we will design our own lovely, summery lunch while doing so!  

Parents:  This is a fun way for your middle-schooler to learn independence in the kitchen, all while utilizing the principles of balance and nourishment to develop snacks and meals.

Let's make magic in the kitchen!  Potions that make sparkly slime, mesmerizing swirly art made of milk, peel a banana WITHOUT using your hands (abracadabra!), alchemize salt into sugar...and much, much more!  All with the power of magical science!  We will spend the day casting spells and learning the science behind them.  Every magician will get to take home their very own book of spells and an enchanting artifact from their day.

Let's Make Samosas!

 

Ages 7-12

We all know and love the iconic samosa, found on Indian restaurant menus the world over.  A savory pastry, often stuffed with curried potatoes, the triangular samosa are a quintessential Indian snack that pairs well with a cup of sweet, gingery chai tea.  The perfect balance!  

In this 2 hour class, we will not only make home-style samosas and chai tea, but we also make an assortment of chutneys, which add fresh, sweet, and/or sour elements to our spicy samosa treats!
